Hey guys. I don't know about yall, but I'm starting to get the itch to cook and bake again. It's that time of year for me where I want to spend all my free time in the kitchen and feeding the ones I love! I love trying new recipes and I've been looking for new ones to try on my friends and Kirk. I've been all up and down the recipe websites and I've found some cool recipes to try but I'm wondering what are yalls favorites for fall & winter? Disney recipes, non Disney recipes, health concious, not so health concious, family favorites, drinks, entrees, snacks/appetizer types of recipes, whatever!

I found this recipe last night and tried it out on my friends. It was addictive. Nobody could stay out of it for very long. I served it with carrot sticks, celery sticks, veggie crackers and toasted triangles of french bread. This recipe does need some tweaking. I doubled the cream cheese and worcestershire and added a little extra garlic. My friend suggested cutting the dill with half dill/half chive. I also used dried parsley rather than fresh. It also took a good 10 minutes to make so it was something quick and easy to prepare on a last minute thing for unexpected company. It's very strong (and serious) at first bite, but you can't help but want more. I'm not a big dill fan and I couldn't stay out of it. To make it spooky for Halloween, add 2 olive eyes and some licorice rope or breadstick legs to make a spider.

Serious Herb Cheese Spread

INGREDIENTS
1 (8 ounce) package cream cheese, softened
2 cloves garlic, minced
1/2 teaspoon prepared mustard
1/2 teaspoon Worcestershire sauce
1/4 cup chopped parsley
1/4 cup chopped fresh dill weed
1/4 cup chopped fresh basil
1/4 cup chopped black olives
1 1/2 tablespoons lemon juice
DIRECTIONS
1.In a medium bowl, mix cream cheese, garlic, mustard, Worcestershire sauce, parsley, dill weed, basil, olives and lemon juice. Transfer to desired mold, and chill in the refrigerator at least 2 hours before serving.

Hey Sen!  Well, I've got some great new recipes I got out of my Food and Family book I get every month or two (if you want to get it, just go to Kraft.com!  It's the neatest thing ever and everyone I've told about it absolutely LOVES it, too, and it's FREE!) and off the Betty Crocker website.  I ended up with 2 1/2 flats of apples, so I've been making apple crisp, apple sauce, carmel apple cake (my personal FAVE!), etc!  Then when I'd finally used those up, my dad brought me ANOTHER bag of apples!  So, I'll share those recipes w/you when I get home from work, ok?  I also got a great crock pot chili recipe out of my food and family book!  I'll post that one, too!  I'm glad I'm not the only one who gets the itch to cook this time of year!!  YAY Autumn!!

Great Jodi! You know I tried a Hawaiianish no bake apple pie recipe the other day. It wasn't bad. I'll have to post that recipe too.

You know I was thinking. I bet that Herb Cheese Spread would be good with some craisins mixed in or some fruit compote/pie filling on top.

That's alot of apples!

Caramel Apple Oat Squares ( serve with a scoop of vanilla ice cream if desired)

Items needed:
____________
1 3/4 cups of all purpose flour
1 cup quick-cooking oatmeal
1/2 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon ( i always add a little bit more then this )


1 cup cold butter or margarine
1 21 ounce can of appe pie filling ( for cheaters hehe..) or
use pre-cooked apple that may be hiding in your freezer ( like i do)

20 caramels
1 14 ounce can sweetened condensed milk
1 teaspoon pure vanilla

1 cup of chopped walnuts ( optional we prefer pecans)

preheat oven to 350 degrees
Mix first six ingrediants on large bowl until blended. cut in butter with a pastry blender until crumbly. Reserve 1 1/2 cups of mixture aside. Press remaining mixture on bottom of a 13x9 inch baking pan. Bake for 15 minutes. Spoon pie filling over prepared crust.

Melt caramels with sweetened condensed milk in a heavy sauce pan over low heat, stirring until smooth stir in vanilla spoon over apples

add nuts to reserve crumb mixture : spoon over top. Bake for 20 minutes or until set. Cool slightly and serve.

There you go an easy one for you.

Those are some interesting facts! LOL Whatever recipes you love best, post them! I've got quite a few pumpkin recipes too but I've yet to try them yet. I want to try them before I post LOL.

Ok, everyone's probably got one but this is mine. It's super tasty, cheap and will feed a lot of people if you double or triple it.



Broccoli Chicken Casserole

1 cup cooked white rice (or 1 bag of the microwave instant rice)
1 can cheese whiz
1 can unprepared cream of mushroom soup
1 can unprepared cream of chicken soup (they have an herbed C.O.C soup now that I like using for this)
1 large can of mushrooms (optional)
1 large can or packet of chicken (drained well)
1 16 oz bag of frozen broccoli (steamed, boiled, however you prepare it. I get either the steamer bags or boil it in water in the microwave).


Mix well in large bowl (I use 2 wooden spoons to get it all in there). Pour into 9x11 casserole pan

Sprinkle top with shredded cheese, bacon bits, chives, whatever really. All of this is optional and can be done in whatever combination you like. I usually don't add anything to the top but if I do it's mainly shredded cheese. I'll add some bacon bits if I want to get "fancy pants"!

Bake at 375 for about 30-45 minutes uncovered. Since everything's already properly cooked through before you put it in the oven, it's just a matter of heating it up and getting a nice crust around the edges and on top (and the cheese you may have put on top is melted through).

This makes **excellent** leftovers and is a REAL crowd pleaser (I have friends beg me to make this for or with their birthday dinners). It's easy to double or triple the recipe as needed. It can act as a main dish with the chicken or it can act as a side dish if you leave the chicken out. The chicken is honestly optional. This is also a great dish for potlucks, family holiday meals where you need to take something, or for busy holiday meals at your own home. It can be prepared, mixed and refridgerated covered in foil and left over night if need be. It doesn't take long to cook so you can cook it where ever you're taking it. I always fix this the night before holiday meals and it's the 2nd to last thing to go in the oven. No extra work or counter space that day.

I've gotten to the point of making this for holidays and whenever we make pork chops. LOL You don't even have to mold it into the shape of a can either. It smells SO good when it's cooking and the whole house just seems to warm up with these smells!

Cranberry Chutney

1 cup water
3/4 cup sugar
12 ounces fresh cranberries
1 cup apples, peeled, cored and diced
1/2 cup apple cider vinegar
1/2 cup raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground clove

In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat. Add cranberries, apples, vinegar, raisins and spices. Bring to a boil then simmer gently for 10 mins stirring often.

Pour mixture into a mixing bowl. Place plastic wrap directly on the surface to avoid a skin forming.

I've never actually had it without the pineapple so not sure how it normally tastes, but everyone who's tried it has said it was better than what they've had before lol.  It's the recipe that my mom has always used and I forget where she originally got it from.

Hey guys! I've got a recipe up my sleeve that I have not made yet, but I'm going to VERY soon! I got a tin of Pumpkin Pancake mix last year from William Sonoma and it was SO GOOD. I found a pumpkin pancake recipe that also has a recipe for hot cider syrup. I'm going to give it a shot soon and I'll post my results, but if someone else beats me to it, PLEASE let me know how they were!!
 

For our calorie counting friends, I've found that anything made with pumpkin tends to be less calories and fat. I think it's because pumpkin is used rather than oils or very little oil and more pumpkin. I've seen a lot of Weight Watchers recipes using chocolate and pumpkin. Those recipes were only a few points per serving. You could probably make this even more diet friendly by using Splenda and possibly wheat flour? I may end up making these tonight for dinner. LOL I'm in a "breakfast for dinner" kind of mood. I can bust out my Mickey shaped pancake rings too!!! I bet these would be great with a side of sausage mmmmm  

 
 
 
Pumpkin Pancakes with Hot Cider Syrup
 
HOT CIDER SYRUP:
3/4 cup apple cider or apple juice
1/2 cup packed brown sugar
1/2 cup corn syrup
2 tablespoons butter or margarine
1/2 teaspoon lemon juice
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
 
 
PANCAKES:
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs, separated
1 cup milk
1/2 cup cooked or canned pumpkin
2 tablespoons vegetable oil
 
 
In a saucepan, combine the syrup ingredients. Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, for 20-25 minutes or until slightly thickened. Let stand for 30 minutes before serving.
 

For pancakes, combine the dry ingredients in a bowl. In another bowl, whisk the egg yolks, milk, pumpkin and oil. Stir into dry ingredients just until moistened. In a mixing bowl, beat the egg whites until soft peaks form; fold into batter.
 
Pour batter by 1/4 cupfuls onto a hot greased griddle. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with the syrup.

Hey guys!

I made the pumpkin pancakes tonight (didn't make the syrup) and let me tell ya.. that recipe's a keeper!

I added the typical pumpkin pie spices to it and a LITTLE more brown sugar. They were super good! We even talked about somehow making these into kolaches w/ a sage sausage inside.

I made this for Thanksgiving and it was out of the ballpark! (Here ya go Beth!)

Rum & Eggnog Cake



1 1/2 cups butter
3 eggs
2 1/4 cups flour
2 teaspoons baking powder
3/4 teaspoon ground nutmeg
1 cup candied fruit
1/2 cup golden raisins
1/2 cup pecans, chopped
2 tablespoons flour
1 cup sugar
1 1/4 cups eggnog
1/4 cup rum
 
1/3 cup orange juice
1 ounce rum
1 cinnamon stick, broken in half
 
 

1. Allow butter and eggs to stand at room temp for 30 mins & preheat oven to 350. Break cinnamon stick in half and soak in 1 ounce rum and 1/3 cup orange juice and set aside.
2. Grease & flour bundt pan
3. In a bowl stir together 2 1/4 c flour, baking powder and nutmeg and set aside
4. In another bowl toss together candied fruit, raisins, pecans and 2 tbs flour
5. In a large bowl beat butter with electric mixer on high speed for 30 seconds
6. Gradually add sugar; beating until light and fluffy
7. Add eggs one at a time; beating for 1 minute after each addition
8. Alternately add flour mixture and eggnog to butter mixture; beating on low speed just until combined after each addition
9. Stir in 1/4 cup rum
10. Fold in fruit mixture (low setting on mixer) -- Batter will resemble a thick, creamy spread.
11. Pour batter into pan and bake for 55-60 minutes
12. Cool in pan on wire rack for 15 mins; remove from pan; cool on wire rack
14. Once cooled, pour 1/3 cup orange juice and 1 ounce rum mixture
15. Drizzle rum mixture over cake and place in fridge (covered) until next day or the day after.

Eggnog Glaze
In a small bowl, stir together 1 cup powdered sugar, 1 tbs eggnog, 1 tbs light Karo, 1/2 tsp rum. Stir in enough additional eggnog (1 tsp at a time) to make a glaze of drizzling consistency. Allow to dry before serving and sprinkle with nutmeg.

There's a variation that uses OJ and rum extract rather than real rum. We spilled on the magazine I got it out of, but if I've still got it handy and still legible, I'll post that variation for you Beth!!
