"Monsieur Paul" is in reference to Paul Bocuse, one of the three chefs who started the restaurant. Chef Bocuse is one of the most famous chefs in the world, having been named Top Chef of the 20th Century by the Culinary Institute of America. He is also considered to be the first "celebrity chef," having put his name on his restaurant in 1965.

“Chef Santin brings invaluable experience from Lyon to the restaurant, including his knowledge of the classic dishes, techniques, and flavors of France,” says Bocuse. “ However, it is still important for us to showcase American ingredients.” For instance, a classic Bocuse fish entrée prepared in France with rouget (red mullet) is re-imagined at Monsieur Paul with red snapper from Florida.

Ambiance beautiful - Food not so much

Perhaps it is because Monsieur Paul intends to cater to a gourmet crowd and I am not so much that, but what I'd hoped would be a delicious adventure at a new Disney eatery was more a regret that we hadn't gone somewhere for simpler fare.  The menu was very small - perhaps because they'd just opened, and I was barely able to find anything on it that I would consider eating.  Once my selections were made, I did the best I could...  but the lobster bisque was so strongly flavored of crustacean shells, I could only eat a few bites.  My scallops were in a "foam" that was "interesting...  if not tasty :P  But the bread was good.  The ambiance was beautiful, and the company superb so I gave Monsieur Paul a 2 (for decor, they get a 5 ; >)  Someday, I may go back and try again...  though not soon.

We had plans to grab a fun meal at Epcot with some visiting family already in place.  When we found out that Monsieur Paul (the restaurant formerly known as Bistro De Paris above Chefs de France) had recently opened its doors, we decided to change our plans and investigate the new digs.  Basically they have done some updates and changed the menu around a bit, but this is pretty much the same restaurant as before -- with a more casual attitude.  Much the same transition which Victorian & Alberts has undergone over the years.  Lets face it, we're Americans!  We really just want to be able to wander into a restaurant and eat without getting all dressed up.

Our visit rapidly turned into a comedy of errors which was a combination of our quirkiness and some poor planning on the part of the staff.  For example, our table was placed right up against the window which had a bar sticking out o
